Really, Italy grows rice?
I've never seen a rice paddy, sad to say.

My daughter and I cooked risotta recently. It's a labor of love for sure! :)

Yes, Dina, and Italy is self-supporting regarding the need of rice to make risotto. Of course for other types of smaller rice there is some import.

Thank you, Virginia. You should try to make risotto also by adding some good red wine. After having started with the finely chopped unions in a mixture of butter and virgin olive oil, you add the rice, and let this go on a low flame. When the rice has taken colour, you add some red wine and let this evaporate, then you add the vegetable stock, etc. etc.
You can do this also with white wine, but I prefer the stronger red wines for this! Bon app├ętit!
